Born in Senegal, West Africa, Iba attended university in Montpelier, France, where he studied agriculture. He originally planned to return to Senegal, but while in France, he “learned the business of food.” A vacation in New York City turned into a three-year stay and a catering business. A Texan, born-and-raised, Keith attended UT and played Longhorns football before discovering his true calling in the kitchen. The culture and challenge of the kitchen reminded him of summers in Sand Mountain, Alabama with his great-grandmother. “She’d make fresh peas and corn with butter, homemade corn bread, and fresh-brewed tea for an afternoon snack.” His foodie repertoire has now expanded to include African specialties like Yassa chicken and rice with mafe, a next-morning cure for too much fun on a Saturday night./Users/iba/Desktop/DSC_7879.JPG
